Ishikawa Pickles
Ishikawa Tsukemono’s “Shakushina-zuke” is a traditional Chichibu-style pickle that incorporates modern flavors while maintaining a low salt content to enhance the natural taste of shakushina greens.

The main ingredient, shakushina, is sourced from Saitama Prefecture. From sowing to harvesting, we entrust the process to local farmers in Chichibu. Each shakushina plant is carefully harvested, sun-dried, and then fermented in barrels that naturally contain beneficial fermentation bacteria. This process results in a rich, lactic acid-fermented product that is both delicious and good for the body.


After fermentation, the pickles undergo strict quality control at our factory before being processed and finished. We take great care to ensure that we deliver safe and high-quality products to our customers.
